Impressive jubilee cake

A special jubilee cake, made by 71-year-old Sue Martin, was cut by High Sheriff, Kay Marriott, at the Independent Arts Creative Society, Newport.

Its crown was removed prior to cutting the middle vanilla sponge which was made with special buttercream filling, including crushed raspberries. It had a bottom layer of rich fruit cake while the crown was chocolate sponge with vanilla filling. The material inside was made of marshmallow and Rice Crispies.

Sue said: “The cake took five days to make; it was an extremely rushed job and would normally take two-to-three weeks to decorate, so I feel it could have been even better!

“I’m 72 next month and I’m still baking, making a lot of cakes for charity fund-raising.”

Sue uses the hub twice a week for creative sessions and has been baking for 50 years.
