A little taste of Texas has arrived in Brading, with Matt McIvor’s Low and Slow opening at Cardinals Restaurant.
It is a new addition to the already successful Low & Slow Co, at Sandown Boulevard, with Matt bringing his Texas-style barbecue to another part of the Island.
Guests were served platters of new creations by a team, including Ben Cooper and Harvey Cornwell.
IW Observer contributor, Michelle Jackson, said: “We’re talking 12-hour smoked brisket, Texas hot link sausage, cherry pork belly burnt ends, and plenty more besides.
“Our platter was extremely generous and absolutely piled with juicy, tender, smoky meat. In fact, there was so much that we simply couldn’t finish it!
“Cutlery became fairly optional as the evening went on – here was definitely plenty of finger licking going on. Quite simply, it was banging.
“There’s a great atmosphere at Cardinals too, and in our view the food represents excellent value for the quality and quantity you’re getting. Matt and his team are clearly passionate about what they do, and we love seeing how this Island business continues to grow and evolve.”
Matt has more than 15 years experience as a chef, and previously worked as head chef at The Boathouse, in Seaview.
